The first thing/ mission we arrived Nha Trang, Vietnam is to find a nice bowl of Pho! We asked the Sunrise Nha Trang receptionist, she said Sunrise has it's own Vietnamese restaurant but local pho restaurants are everywhere. Hence we decided to try our luck by walking around the area. Our criteria was simple, the pho place has to be local. Somehow my idea of where to get pho is the more shady a place gets, the better their pho is. After a brief 10 minutes search, we found Hong Giang Pho. I am really glad we found Hong Giang, as it serves the pho in Nha Trang style!
This pho place captured our attention as we saw the old lady cutting some beef shank which looked amazing. We immediately went in and sat down.
The restaurant was simple with no fancy setup. You can basically see the whole restaurant as well as it's operation in one glance. You can see the broth preparing at the big pot and the beef cutting station at the open kitchen. It is better this way as there is no English menu in Hong Giang, so all you need to do is point! I think there is no price either, but for your reference, our 2 bowls of pho plus a beef shank costs only around VDN41,000 (HKD15.60)! So effin cheap!

On the wooden table, you can find all the condiments you need, from fish sauce, chilli sauce, seafood sauce to soy sauce and homemade garlic sauce. Lime and chillis were also put on the table at your disposal.
Also a very shocking thing we found is the paper that put on the stand (See above picture, most right) is actually tissue for wiping your mouth etc!!!!!! That paper was crazily hard and in Hong Kong we only use it to take orders.... Bring your own Tempo pocket tissues to Nha Trang LOL.
Bean Sprouts as different from Hong Kong, was served warm and soft.
Here comes my pho! I immediately took a sip of the broth and it tasted AMAZING! Finally I tasted pho broth with some depths! The broth was infused with oil, it was sweet, very herby and had a strong beef flavoured. When I have pho in Hong Kong, I usually add loads of chilli sauce and seafood sauce, but the broth here was packed with so much flavours that adding extra sauces will just ruin the broth! We literally down our bowl with a few squeeze of the lime and the basils given.
Nha Trang's pho is very different from every else in Vietnam, it is famous for the distinctive sweet broth and board noodles. The Northern style eg in Hanoi serves stronger flavoured broth and thinner noodles. So when you come to Nha Trang, you gotta get a bowl that is filled with Nha Trang specialty!

As said Hong Giang serves Southern Style pho which has broad noodles. It was a bit soft in texture. I have to say I prefer the Northern style pho more which offers thin vermicelli. (We found a nice one called Pho Hong!)
The beef that comes in the pho was tender but was quite lean. We ordered a side order of the beef shank that the lady was cutting when we went into the restaurant. The beef shank tasted much better with a good chewiness and a stronger beef flavour!
