I had my first Mist ramen around 2 years ago, but I did not find it amazing. Gastronomer brought it up in a conversation recently and urged me to try it again as she thinks it's really good. I finished work late today, so I decided to revisit Mist again for their pricey bowl of ramen.
Ingredients and service here are topnotch. They even have a information sheet about the source for their ingredients. There was also an information sheet on Mist's ramen. They offer ramen in 3 sizes - 18, 22 or 26. Size 18 is the thickest which retains less soup and pairs well with strong robust broth such as Soya or Miso. While Size 26 is the thinnest for more refined and depth flavour broth.

Amuse Bouche - Tomato Mozzarella
Hokkaido Scallop Salad $60
The pan fried scallop was a surprised to me as it had a strong char taste. Unfortunately it was cold and quite rubbery, or else it would be delicious. The orangey sauce was a bit too sour for me, but the two sauces went well with each other and paired great with the salad leaves.
Miso Ramen $190
This bowl of ramen was extremely aromatic, you could literally smell the strong Miso taste in the air. The broth was delicious and very savoury with strong miso taste and was quite thick and creamy. (not thick as those that put weights on your palate.)The noodles had great texture, it wasn't like any ramen that I have tasted before. It was smooth and chewy. The texture might result from the mixture of dough from three cities in Japan. The taste was indescribable too, like it retains the flour taste? Well you have to taste it!
The Pork had the perfect fat distribution, it was nicely smoked but still rather rough. The egg was excellent on the yolk, creamy orangy yolk which tasted sweet and milky. The seaweed was quite disappointing though, it was sour and stink for unknown reason, but I didn't ask for replacement, since I am contended with my bowl already.
Green Tea Creme Brûlée $55
I was struggling if to have this green tea creme brulee but it sounded interesting so why not I guessed. The top wasn't particularly crispy but still with great caramel taste. It was aromatic with strong green tea and vanilla taste. It also had a strong milk taste in it, probably used Hokkaido 3.6 Milk?I had a BIG dinner tonight, I also had a glass of Douglas Chardonnay (Priced$ 68) but regretted ordering since it didnt pair with anything that I had tonight. The ramen was quite pricey, it was around $190 if you have all the sides on your bowl. Yet I think it is definitely worth it, the ramen was nice from broth to noodles!
