Today I was lucky enough to attend the traditional Kagami-biraki ceremony which means "Opening the mirror". A complimentary cup of Hakkaisan Sake and the beautiful wooden cup were also given at the night! =)
The Kagami-biraki was held by the CEO of Gonapachi Mr Paul Kwok and the representatives from Hakkaisan brewery.
By the end of a count down, the representatives broke the wooden top cover of the cask with the wooden hammer. Cheers followed and the wooden cups were filled with sakes by using the wooden ladles and passed to all diners of the night.

Before the ceremony began, the big cask and a mountain of wooden cups were setup at the main entrance which built up an exciting atmosphere for the night.

Ta-dah! These 3 bottles were the ones I tried tonight! Each had a very distinctive taste from one another.
Sakuragao Brewery - JUNMAI DAIGINJO Hitensho 720ml - HKD688
The Junmai Daiginjo Hitensho was a fruity and smoothing sake with a mild alcohol content. It was a passionate sake with a sweet finishes.
The next sake is a rather special one. It had a slightly stronger alcohol content as it was made without fermentation and without dilution with water. The glass was much smoother than the previous sake. It was simple but elegant, smooth and fruity. This sake is said not to be found anywhere else in Hong Kong except Gonpachi, and also only available in Michelin Starred restaurants in Japan. Hmmm, such a prestigious bottle!
The last sake was also nice. It tasted the strongest among the three I tried tonight, it was also smooth and fruity.
