My sudden crave of Malaysian food brought me to Sheung Wan to revisit my old love, Malaymama. I could not tell Malaysian cuisine's authenticity, all I know is Malaymama is good!
Bak Kut Teh (肉骨茶)
I was originally craving for some Laksa, but I have never tried Malaymama's Bak Kut Teh before, so I chose that instead. Bak Kut Teh is not everyone's cup of tea. It is a Chinese herbal soup with meaty pork ribs with lots of spices such as star anise, cinnamon, cloves, gang gui, gennel seeds and garlic, simmer for hours to give its strong taste and aroma.
Malaymama's Bak Kut Teh is delicious. The broth was very yummy with a complex taste of Chinese herbs. I had my Bak Kut Teh with rice. The ribs was braised soft but mine was a bit too lean overall. The Yau Char Kwai (fried tofu puff) was soaked soft, it would be better if served as side or put last so to keep its crispiness. The condiment dish, soy sauce with chilli to go with the ribs was not as flavourful and as thick as the ones I had in Singapore. I wonder how the Singaporean made them, I should have asked them when I was there.
Kah Yah Toast
The Kah Yah Toast in Hong Kong is very different from the ones I had in Singapore. The ones that I have in Hong Kong usually offers Kah Yah Toast like Malaymama's - toast the breads and spread Kah Yah and butter in between the two toasts. While the ones I had in Singapore was made differently - A slice of bread is sliced half and the Kah Yah is spread between them, combined and toast. The final outcome of the Singaporean version results in crispier and thinner toast, it is also less messy as the Kah Yah is held in between. I actually like them both ways, just the version in Singapore gives more of a crispy finishing.
Malaymama make their own Kah Yah in house, their Kah Yah is made with Pandan, egg and coconut milk. The Kah Yah was creamy with a strong coconut taste and was perfected with the sinful thick slice of creamy butter! P.S. you have to request for the butter if you want it in your toast. The owner explained many people actually complained about the thick slice of butter. Oh man, that is the best part of this Kah Yah toast!
Malay Milk Tea
Athough the milk tea was named Malay Milk Tea, it was actually a Hong Kong Style Milk Tea. It had a full body with a good balance of milk and tea where the tea taste was not being overpowered.
