If you ask me what was my best meal in Nha Trang, it was definitely nem nuong Ninh Hoa's (grilled fermented pork roll). Nem nuong Ninh Hoa's is a popular dish in Nha Trang, you can easily find the fresh ones (nem chua) on the street, but the grilled one tasted the best. Nem nuong (grilled pork skewer) by itself might not be exciting, but when combining with herbs and fruits together in a rice paper roll, served with the heavenly dipping sauce Tương Chấm, is to die for! The restaurant that I recommend for this dish is called Nem Nuong Vu Thanh An.
Before my Nha Trang trip, I have never tried grilled fermented pork roll my entire life and it was the best food I had and miss in Nha Trang. Nem Nuong Vu Thanh An at 15 Le Loi is the best place to go for nem nuong(grilled pork skewer). It is a branch store and its original home is 34 km from Nha Trang. I never see any chain restaurant in Nha Trang (apart from convenience stores), so it being a chain restaurant is pretty much a quality assurance.
Basically you cannot get lost while finding Nem Nuong Vu Thanh An even if you cannot recognise the entrance. The drooling aroma from the grilling of nem nuong can definitely guide you to the restaurant. As I mentioned earlier, this is a popular restaurant, you would often see a crowd in front of it. So just follow your senses if you are looking for this shop!
The fermented pork is made from scratch into a skewer. The skewer is then brought out to the store front and grilled on a coal brazier. That's why you cannot miss the char aroma!
Turn, turn, turn, turn.... fire the nem nuong and have it stuff in my belly!!!!!
After grilling, the nem nuong is cut into half, ready to be served. OMG I want the whole pot of that.....Drool.
The menu at Nem Nuong Vu Thanh An is simple with only a few options. The server gave us an English menu but did not really help. We ended up showing the picture of what we want to the server.
So here it is, the long awaited Nem Nuong Ninh Hoa/ Grilled fermented pork roll that I miss soooo much from Nha Trang.
The main ingredient is, of course the grilled fermented pork. The yellowish brown crisp served at the side is deep fried rice paper roll. The pork was delicious! It was savoury with a lovely charred rim and was very tender in texture.
Hung que (Vietnamese Basil) and ngo gai (Culantro), cucumber and green papaya are also served for the roll. The green papaya tasted very sweet, like mango but with a crunchier texture.
The rice paper roll was very hard in texture, but was not too unfavourable as it got a nice chew with it. The translucent rice paper was beautiful, you can see the basket weave pattern on it.
To make the roll, you basically just need to put everything on the rice paper and roll it. We use one piece of nem nuong and 1-2 pieces of rice paper crisps along with a few of the other ingredients to make our roll. Below picture shows the roll I made. It seems I am a bit greedy, as the roll seems too big LOL. Henry used two pieces of nem nuong, so don't judge me. =P
This magical sauce is called Tương Chấm. This vivid orangy coloured sauce was sweet and quite thick in texture. The flavourful sauce greatly enhanced the overall taste of the already palatable roll!
Nem Nuong Vu Thanh An also offers Giò lụa (Vietnamese sausage). Hundreds of them are wrapped in banana leaves.
To my surprise there is a clear plastic wrap holding the Giò lụa! Very hygienic packaging.
Yum...Although not strongly flavoured, I love vietnamese sausage by its delicate flavour and bouncy texture.

This was truly the best meal I had in Nha Trang. It was just too good that I went back again for takeaway after our big dinner the last night before we left. Seriously you have to go to Nem Nuong Vu Thanh An to have a taste of nem nuong Ninh Hoa. If you don't, you have not been to Nha Trang.
